Preheat the oven to 450°F.
Arrange the bread slices on a baking sheet and drizzle the olive oil over top. Place in the oven and bake until golden brown and crisp. Remove and set aside to cool.
In a medium mixing bowl, whip together the braunschweiger and butter until creamy in consistency. Place in a pastry bag fitted with a star tip.
Pipe about 2 tablespoons of the braunschweiger mousse onto each crostini and garnish with olive slices.
