Instructions:
Prepare rice according to package instructions, then stir in the corn and black beans.
In medium skillet, heat the oil over medium heat.
Place 1 tortilla in the pan and top with the turkey and half the cheese.
Place the second tortilla on top. Sprinkle with the cabbage, tomatoes, remaining cheese and last tortilla.
Cook for 3 minutes, until well browned, flip, and cook for 3 minutes more until well browned and heated through
Place the rice in the center of a plate, cut the quesadilla into six wedges and lean up against the rice. Garnish with the sour cream and cilantro.
