Turkey Quesadillas

Serves: 2 (One Large Quesadilla)

Ingredients:

  • 1 package Spanish Rice, prepared according to package instructions
  • 1 small can whole kernel corn, drained
  • 1 small can black beans, drained
  • 1/4 cup olive oil
  • Three 5-inch fresh corn tortillas
  • 1/4 pound Black Bear® Tex Mex Brand Turkey Breast, julienned
  • 1/2 cup Black Bear® Peppadew Cheddar, shredded
  • 1/4 cup shredded white cabbage
  • 1 tomato, seeded and finely diced
  • 2 tablespoons sour cream, for garnish
  • 1 large sprig cilantro, for garnish

Instructions:

Prepare rice according to package instructions, then stir in the corn and black beans.

In medium skillet, heat the oil over medium heat.

Place 1 tortilla in the pan and top with the turkey and half the cheese.

Place the second tortilla on top.  Sprinkle with the cabbage, tomatoes, remaining cheese and last tortilla.

Cook for 3 minutes, until well browned, flip, and cook for 3 minutes more until well browned and heated through

Place the rice in the center of a plate, cut the quesadilla into six wedges and lean up against the rice.  Garnish with the sour cream and cilantro.
