Steak & Cherry Tomato Blue Cheese Summer Salad

Serves: 4

Ingredients:

Italian Herb Vinaigrette

  • 2 tablespoons red wine vinegar
  • 2 teaspoons lemon juice
  • 1 tablespoon Dijon Mustard
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried basil
  • 1/4 cup olive oil
  • 1 minced clove garlic-1/4 teaspoon
  • 1/4 teaspoon Kosher salt (optional)
  • Fresh ground pepper to taste

 

Instructions:

Place washed and spun greens in a bowl

Top with roast beef and cheese strips

Top with tomatoes and red onion

Sprinkle with pine nuts (optional) and blue cheese
