Gourmet Breast of Chicken Caesar Salad

Serves: 4

Ingredients:

  • 2 heads romaine lettuce
  • 1 head radicchio
  • 10 vine ripened cherry tomatoes, cut in half
  • 2 cups Herbed Croutons (recipe follows)
  • 1 small red onion, thinly sliced
  • 1 1/2 pounds Black Bear® Gourmet Breast of Chicken, sliced into 2-inch strips
  • 1/2 cup prepared Caesar dressing
  • 2 tablespoons grated parmesan cheese

Herb Croutons

  • 4 tablespoons unsalted butter
  • 2 medium shallots, peeled and chopped
  • 3 cloves garlic, peeled and chopped
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh basil
  • 3 tablespoons chopped fresh parsley
  • 1 sprig fresh thyme, stemmed and chopped
  • 1 tablespoon grated Parmesan cheese
  • 1 baguette (with or without the crusts), cut into 1-inch-long sticks

Instructions:

Rinse and dry the romaine and radicchio, then tear into bit-size pieces and place in a large mixing bowl.

Gently toss together with the remaining ingredients and serve.

Herb Croutons

Preheat the oven to 350°F.

Melt the butter in a small saucepan over medium heat, add the shallots and garlic, and sauté until golden for about 1-2 minutes.

Combine the oil, basil, parsley, thyme, cheese, and sautéed shallots and garlic in a medium bowl, add the bread cubes, and toss until well coated.

Spread the bread cubes in a single layer on a baking sheet, and bake until golden brown and crisp, about 10 to 15 minutes. Cool completely, and store in an airtight container.
