Instructions:
Rinse and dry the romaine and radicchio, then tear into bit-size pieces and place in a large mixing bowl.
Gently toss together with the remaining ingredients and serve.
Herb Croutons
Preheat the oven to 350°F.
Melt the butter in a small saucepan over medium heat, add the shallots and garlic, and sauté until golden for about 1-2 minutes.
Combine the oil, basil, parsley, thyme, cheese, and sautéed shallots and garlic in a medium bowl, add the bread cubes, and toss until well coated.
Spread the bread cubes in a single layer on a baking sheet, and bake until golden brown and crisp, about 10 to 15 minutes. Cool completely, and store in an airtight container.
