Ham, Honey, & Onion Sandwich

  • 1 medium whole-wheat ciabatta loaf sliced into 4 individual portions
  • 2 slices Black Bear Dinner Ham
  • 2 tbsp butter
  • 4 small shallots
  • 2 big yellow onions
  • 2 red onions all sliced thin
  • 2 cups arugula
  • 2 tbsp honey
  • 1 tbsp Black Bear Stone Ground Mustard
  • 1/4 tbsp Black Bear Dijon Mustard


  1. Heat the butter on low heat in a non-stick pan, add the onions and salt, and cook for about 20-25 minutes, stirring every now and then.
  2. The onions should soften, then become translucent, and then start to brown.
  3. Add the honey and mix gently. Cook further for 10 minutes, turn the heat off and add both types of mustard, mixing until evenly distributed.
  4. Layer ham, onions and arugula.
